The Hysham Echo Newspaper has been published since Nov. 28, 1911 for Treasure County, Montana.

The Echo has undergone many changes over the years and I was honored to be the editor at the time it turned 100.

Each week I will publish the recipes and Page from the Past and the obits as soon as I receive them.

Below are some recipes that I have tried recently and really liked. I hope you like them too.

Crispy Chicken Strips

3 pounds raw chicken breast tenders
1/4 to 1/2 cup buttermilk
3 cups all-purpose flour
2 to 3 teaspoons Johnny’s seasoning salt
Vegetable oil
Dipping sauce - for serving
Submerge the chicken strips in the buttermilk for 15 to 20 minutes (or longer if you’d like).
In another bowl, combine the flour and seasoning salt (or other seasonings if you prefer). Mix this together well. Next, gradually drizzle 1/4 to 1/2 cup of the buttermilk into the flour mixture and stir lightly with a fork as you add it to achieve clumps in about half of the flour.
Heat about 1 inch vegetable oil in a large skillet over medium-low to medium heat.
Remove a few of the buttermilk-soaked chicken strips and place them in the flour mixture, turning them over to coat thoroughly. Place them on a rack. Continue coating the chicken strips until they are all ready to cook.
When the oil is sufficiently heated, begin cooking the strips a few at a time. Cook them for about a minute and a half or so on each side. When golden and crispy and the chicken is done, remove them to a rack. Do not allow them to burn. Serve with your favorite dipping sauce.

Apple Pecan Coffee Cake

1/4 cup vegetable shortening
1/2 cup sugar
1 egg
1/2 teaspoon vanilla extract
1 cup flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
1/2 cup sour cream
3/4 cup peeled, finely chopped apple
1/4 cup pecans - or other nuts, chopped
1/4 cup brown sugar
1/2 teaspoon cinnamon
1 tablespoon butter, melted
Cream shortening and sugar. Add egg and vanilla beat well. Mix flour, baking powder, baking soda, and salt together add to creamed mixture alternately with sour cream. Fold in apples. Spread batter into a greased 8 x 8 x 2-inch baking pan. Combine pecans, brown sugar, cinnamon, and butter. Sprinkle over batter. Bake at 350 F. for 30-35 minutes. Cool 10 minutes. Remove from pan cool thoroughly. Wrap coffee cake in foil, label, and freeze. To serve, heat frozen coffee cake in foil at 350 F. for 30 minutes or until warmed through. Open foil wrap last 10 minutes of heating.

Biscuit Puffs
1 tube Pillsbury Grand Biscuits
Vegetable Oil for deep-frying
Cut biscuits into quarters
Deep fry (375 degrees) about eight at a time for about 1 minute per side. (I use a Fry-Daddy)
Sprinkle with sugar right away when taken from hot oil. They can also be made the day before and reheated in the oven. Print this post
