The Hysham Echo Newspaper has been published since Nov. 28, 1911 for Treasure County, Montana.

The Echo has undergone many changes over the years and I was honored to be the editor at the time it turned 100.

Each week I will publish the recipes and Page from the Past and the obits as soon as I receive them.

Local Newspaper Owner Publishes Cookbook


Hysham Echo’s Cooking Corner columns years 2002 through 2005 are now available in the cookbook Carol’s Cooking Corner. With a love of cooking and cookbooks that goes back to childhood, Carol Klinker, former home economics teacher-turned-newspaper owner, has turned a dream of publishing a cookbook into a completed goal.

Klinker thought it would be nice to put together a cookbook, but it wasn’t until 2002 that she began to turn that thought into a reality. As she created the columns for the Echo’s cooking column, she also entered them into the computer and indexed them as she went along.

Klinker worked with G&R Publishing to customize a book that would keep the original content and look as Klinker had entered it in the paper. Many of these recipes have notes and stories that accompany them, just as they did in the paper.

With recipes that were collected from family, friends, students, and anywhere there was a good recipe, there’s sure to be some new family favorites within the pages. In category 2002 on page 37, Klinker has a recipe for Fruit Cake that was her mom’s (see below for the full recipe and note that originally appeared in the November 28, 2002, Cooking Corner). Many of these recipes have been used while serving guests at Klinker’s local bed and breakfast.

Excerpt from Carols Cooking Corner –
It is getting close to Christmas and time to start thinking about making that fruitcake. Now I know that some people think that all fruitcake is disgusting, but my mom’s recipe is different. It is good! She makes it every year and usually sends some to my sister and gives some to me as well. I look forward to getting a couple of loaves and I try to make them last all year…although they usually don’t.

Fruitcake (Mom’s)
1 lb. package Radiant Fruit Mix
3 c. raisins
3 c. dates, chopped
2 c. walnuts, chopped
1/4 c. honey
1/4 c. dark fruit juice
1 c. margarine
1 1/4 c. brown sugar
4 eggs
2 c. sifted flour
1/4 t. baking soda
1/4 t. salt
1 t. cinnamon
1/2 t. mace
1/2 t. cloves
Mix fruits and nuts in very large mixing bowl or pan. Cream margarine and sugar, add eggs, one at a time, beating thoroughly. Add honey, fruit juice, then dry ingredients. Pour this mixture over fruits and mix well. Line 2 loaf pans with brown paper and bake at 275 about 2 1/2 hours with a pan of water on bottom rack of oven. Remove from oven but leave paper on cake.
