The Hysham Echo Newspaper has been published since Nov. 28, 1911 for Treasure County, Montana.

The Echo has undergone many changes over the years and I was honored to be the editor at the time it turned 100.

Each week I will publish the recipes and Page from the Past and the obits as soon as I receive them.

Apple Recipes

Apple Rice
2 c. apple juice
2 c. instant white rice
2 T. butter
2 Macintosh apples ( or other sweet apples) diced into small pieces
In a sauce pan, add diced apples and apple juice. Bring to a boil.
Add in white rice and cook over lowest heat until all juice is absorbed.
Add in butter.

Apple Pancake
1 medium apple, skinned and sliced
3 T. butter
1/4 c. sugar, divided in half
1 T. cinnamon
1/2 c. white flour
dash of salt
1/2-1 t. vanilla extract (your taste)
2 eggs
1/2 c. milk
Preheat oven to 425 degrees.
Place 10 inch cast iron skillet on stove on medium heat, melt butter. Meanwhile, peel, core, and slice apples. Place apples, cinnamon, and half of sugar with butter to saute. While the apples cook, mix flour, salt, half of sugar, vanilla, eggs, and milk together with a whisk until light. When apples are soft, pour batter over apples, and place pan in oven for 15-20 minutes. When fully cooked, invert apple pancake on to a plate after removing from oven to serve.

Caramel Apple Dip
This great apple dip is awesome with fresh cut granny smith apples.
1 8 oz. block of low fat cream cheese
1 c. brown sugar
1 t. vanilla
Stir to blend. Serve with fresh cut apples.

Baked Honey Apple Wedges
1 Large Apple
2 T. honey
2 t. cinnamon
Peel, Core and wedge apple (I do 6 wedges)
Add apple wedges to smallish oven safe bowl
Add honey and cinnamon
Stir to coat apple
Bake at 430 for 15 minutes
Stir to coat apple
Bake for 10 more minutes.

Apple Carrot Muffins
3 c. all-purpose flour
1 c. whole wheat flour
2 c. sugar
2 t. baking soda
2 t. baking powder
1 t. salt
1 t. cinnamon
1/4 t. nutmeg
2/3 c. plain non-fat yogurt
1/2 c. orange juice
1/2 c. maple syrup
6 egg whites or 1 c. non fat egg substitute
1/4 c. canola oil
1 1/2 T vanilla extract
2 t. dried orange peel
1 lb grated carrots
1 lb shredded Washington apples
1) In mixing bowl, blend flours, sugar, baking soda, baking powder, salt, cinnamon and nutmeg.
2) In separate bowl, blend yogurt orange juice, maple syrup, egg whites, oil, vanilla, orange peel, carrots and apples.
3) Stir apple mixture into dry ingredients just until moistened; do not over-mix.
4) Portion 1/3 cup into paper-lined or non-stick muffin tins. Bake in preheated 375 F oven for 22 to 25 minutes, until tops spring back when lightly touched.

Apple Oatmeal
1/2 c. diced Golden Delicious apple
1/3 c. apple juice
1/3 c. water
1/8 t. cinnamon
1/8 t. nutmeg
1/8 t. salt (optional)
1/3 c. quick cooking oats
1) In small pot, combine apple, apple juice, water, cinnamon, nutmeg, and salt (if desired); heat to boiling. Stir in oats and cook 1 minute. Cover and let stand two minutes before serving.

California Chicken Salad
The next time you heat up the grill, cook some extra chicken to keep on hand for a variety of quick main-dish chicken salads, such as this one, studded with fruit and nuts.
1/2 c. low fat plain yogurt
1/2 c. reduced-calorie mayonnaise
1 Red Delicious apple, cored and chopped
1 stalk celery, chopped
1/4 c. plus 1 tablespoon toasted chopped hazelnuts
3 T finely chopped sweet onion or green onion
1/4 t. each salt and pepper
4 c. shredded cooked chicken (about 2 pounds boneless, skinless chicken)
Soft lettuce leaves
1) In large bowl, combine yogurt and mayonnaise.
2) Add apple, celery, 1/4 c. hazelnuts, onion, salt, and pepper.
3) Stir in chicken. Serve on a bed of lettuce leaves, garnished with remaining tablespoon hazelnuts, or refrigerate until serving.

Apple-Turkey Burgers with Cranberry- Apple Salsa
Cranberry-Apple Salsa:
2 T. sugar
2 T. cider vinegar
2 T. fresh lemon juice
3 sweet apples, peeled, cored, and chopped (about 2 cups)
1 c. whole cranberry sauce
1/2 c. scallions, finely chopped
1 jalapeno pepper, stemmed, seeded, and finely chopped
2 T chopped fresh cilantro (optional)
Apple-Turkey Burgers:
1 lb. ground turkey
1 large apple, grated
1/2 t. salt
1/2 t. black pepper
1/4 t. ground cinnamon
cooking spray
4 (2-oz.) whole wheat hamburger buns, toasted
1) To prepare salsa, combine sugar, cider vinegar, and lemon juice in a medium saucepan and bring to a boil. Add half of the chopped apples stirring well; cover and reduce heat. Cook gently until apples are soft and mash with a potato masher until almost smooth. Add cranberry sauce to apple mixture and let cool slightly. Add the remaining apples, scallions, jalapenos, and cilantro if desired. Serve with Apple-Turkey Burgers. Refrigerate any remaining salsa for up to 3 days.
2) To prepare burgers, combine turkey, apple, salt, pepper, and cinnamon in a medium bowl. Divide turkey mixture into 4 equal portions, shaping each into a patty. Lightly coat a large skillet or grill pan with cooking spray and place over medium-high heat. Cook turkey burgers 6 to 8 minutes per side or until done. Serve on toasted buns with Cranberry-Apple Salsa. Print this post
