The Hysham Echo Newspaper has been published since Nov. 28, 1911 for Treasure County, Montana.

The Echo has undergone many changes over the years and I was honored to be the editor at the time it turned 100.

Bacon Day

According to Wikipedia: International Bacon Day or Bacon Day is an unofficial observance held on the Saturday before Labor Day in the United States. (Labor Day is traditionally the first Monday of September). Bacon day celebrations typically include social gatherings during which participants create and consume dishes containing bacon, including bacon-themed breakfasts, lunches, dinners, desserts, and drinks. - Well, I messed up..... I forgot all about Bacon Day until it was too late - but..... I thought I would include a few recipes using bacon so you can be ready for next year’s celebration. - - Don’t forget: The Saturday before Labor Day make all kinds of things with bacon and you might even want to use one or two of the following recipes!

Breakfast Pizza
Yield: 6 servings
1-9 single-crust pastry
1/2 pound bacon - cook -- crumble
8 ounces swiss cheese - shredded
4 eggs
12 ounces sour cream
2 tablespoons fresh parsley - chopped
Roll pastry to fit into a 12” pizza pan. Bake at 425ยบ for 5 minutes. Sprinkle bacon and cheese evenly over crust. In a bowl, beat eggs, sour cream and parsley until smooth; pour over pizza. Bake for 20 to 25 minutes or until pizza is puffy and lightly browned. Yield 6 main-dish or 18 appetizer servings.

Fresh Broccoli Salad
2 bunches fresh broccoli
2 small red onions - chopped
1 pound bacon - diced and fried
1/2 - 3/4 cup sunflower seeds
DRESSING:
1 cup mayonnaise
2 tablespoons vinegar
4 tablespoons sugar
Chop broccoli into small bite-size pieces. Add onions and bacon. Prepare dressing and pour over broccoli. Mix thoroughly and let marinate for 1 to 2 hours. Add sunflower seeds just before you serve.

Corn And Cheese Chili
1/2 pound bacon
32 ounces corn
16 ounces light red kidney beans
16 ounces dark red kidney beans
28 ounces Italian tomatoes - in puree
1 onion - chopped
1 green pepper - chopped
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon salt
1 cup cheddar cheese - sharp, grated
Cut the bacon into 1/2-inch strips and fry until crisp. Drain. Place the bacon fat in a heavy pot. Drain the corn, light and dark kidney beans, and tomatoes, reserving the liquid. Put the vegetable liquids, onion, and green pepper in the bacon fat, cook until the liquid is reduced by half. Add the corn, beans, tomatoes, chili powder, cumin, and salt. Heat to quite hot. Stir in the grated cheese and cooked bacon and serve.

Impossible Bacon Pie
12 Bacon - sliced, cooked, crumbled
1 cup Swiss cheese - shredded
1/3 cup Onion - chopped
2 cup Milk
4 Eggs
1 cup Bisquick
1/8 t. Pepper
Preheat oven to 400. Grease pie plate, 10 x 1 1/2” Sprinkle bacon, cheese and onion in pie plate. Beat remaining ing. 15 sec. in blender on high speed.
Pour into pie plate. Bake 35-40 min. or until knife comes out clean.
Cool 5 min. VARIATION; Substitute 2 c. fully cooked smoked ham for the bacon, cut-up. 1/2 RECIPE: Use 1 qt square or round casserole.
Decrease onion to 2 tb. Divide remaining ing. amts in half.
Decrease beat time to 10 sec. HIGH ALT: Bake about 45 min. For 1/2 recipe: use 1 1/2 qt round or 1 qt square casserole. Bake 30-40 min.

Bacon Dressing
4 Slices Bacon - diced
1 Cup Croutons
1/4 Cup Salad Oil
2 Tablespoons Vinegar
1 Teaspoon Dry Mustard
1/2 Teaspoon Salt
1 Tablespoon Sugar
Bacon Drippings
1 Cup Sour Cream - at room temperature
Fry bacon until crisp. Remove, drain and crumble.
Keep bacon drippings hot.
Combine salad oil, vinegar, mustard, salt and sugar. Beat well.
Gradually beat in hot bacon drippings.
Stir in sour cream.
Serve over salad greens. Top with crumbled bacon and croutons.

Confetti Pea Salad
2 packages frozen green peas - thawed (10 oz.)
1 (8 oz.) container Borden Sour cream
6 slices bacon - cooked and crumbled
6 Green onions - sliced
1 jar chopped pimiento - well drained
1 teaspoon Beau Monde seasoning or seasoned salt
Lettuce leaves - (optional)
In large bowl, combine ingredients; chill 2 to 3 hours to blend flavors. Stir before serving. If desired, serve on lettuce. Refrigerate leftovers.

Pull-Apart Vegetable Bread
3 cans refrigerated buttermilk biscuits - (10 oz. ea.)
1/2 cup margarine - melted
1/2 pound bacon - cooked and crumbled
1/2 cup grated Parmesan cheese
1/4 cup onion - finely chopped
2/3 cup green pepper - finely chopped
Cut biscuits into quarters with kitchen shears; dip each piece in the melted margarine and layer 1/3 in a lightly-greased 10-inch bundt pan. Sprinkle with half of bacon, cheese, onion and green pepper. Repeat layers until all ingredients are used, ending with biscuits. Bake in 350 degree oven 40 to 45 minutes, or until done.
