The Echo has undergone many changes over the years and I was honored to be the editor at the time it turned 100.

Each week I will publish the recipes and Page from the Past and the obits as soon as I receive them.

Spam

When I was growing up my mother would sometimes fry Spam for our breakfast meat. She would also make Spam sandwiches for us at noon. Since then Spam has become popular in other dishes and is a fairly economical meat to serve. This week I tried to find a variety of recipes that you could use Spam in. Enjoy!

Spam Musubi
2 cups uncooked short-grain white rice
2 cups water
6 tablespoons rice vinegar
1/4 cup soy sauce
1/4 cup oyster sauce
1/2 cup white sugar
1 (12 ounce) container fully cooked luncheon meat (e.g. Spam)
5 sheets sushi nori (dry seaweed)
2 tablespoons vegetable oil
Soak uncooked rice for 4 hours; drain and rinse.
In a saucepan bring 2 cups water to a boil. Add rice and stir. Reduce heat, cover, and simmer for 20 minutes. Stir in rice vinegar, and set aside to cool.
In a separate bowl, stir together soy sauce, oyster sauce, and sugar until sugar is completely dissolved. Slice luncheon meat lengthwise into 10 slices, or to desired thickness, and marinate in sauce for 5 minutes.
In a large skillet, heat oil over medium high heat. Cook slices for 2 minutes per side, or until lightly browned. Cut nori sheets in half and lay on a flat work surface. Place a rice press in the center of the sheet, and press rice tightly inside. Top with a slice of luncheon meat, and remove press. Wrap nori around rice mold, sealing edges with a small amount of water. (Rice may also be formed by hand in the shape of the meat slices, 1 inch thick.) Musubi may be served warm or chilled.

Basic Baked Spam
1 12 oz. can Spam of your choice
Whole cloves
2/3 cup brown sugar
1 teaspoon vinegar
2 teaspoons yellow mustard
2 teaspoons water
1 teaspoon Worcestershire sauce
Preheat oven to 375 degrees. Score Spam in diamond pattern and dot with cloves. Mix sugar, vinegar, mustard, water and Worcestershire. Brush on Spam. Bake 25 to 30 minutes, basting three or four times.
Note: This is a generous amount of topping, enough for two cans of Spam at once, if you want to serve more.

Macaroni & Cheese with Spam and Broccoli
1 7 oz can of Spam of your choice, diced
1 Box of Macaroni & Cheese Mix
1 9 oz . box of Cut Broccoli, cooked
Prepare box of Macaroni and Cheese as directed. Cook broccoli as directed. Brown Spam in skillet and drain. When Macaroni and Cheese Mix is complete, stir in broccoli and Spam. Mix well. Serve hot.

Italian Spam Cheese Ball
1 8 oz. pkg softened cream cheese
2 T Italian Seasoning
1 clove fresh garlic, pressed
1/8 cup sun dried tomatoes, chopped
1/2 can Spam, chopped
1/4 cup crushed pineapple, drained
Mix all in Kitchenaid mixer. Roll into ball while coating with crushed pecans. Refrigerate.

Spam Fried Rice Recipe
2 Tbsp. oil divided
2 x-Large eggs beaten
1 can Spam luncheon meat - (12 ounce) cubed
1/4 c. finely-minced mushrooms
1/4 c. minced green onion
2 c. cooked rice
3 Tbsp. soy sauce
In a large skillet, heat 1 Tbsp. oil. Add in Large eggs. Cook, stirring, to desired doneness. Remove from skillet.
In the same skillet, heat remaining 1 Tbsp. of oil. Cook Spam, mushrooms and onion 4 min or possibly till vegetables are tender. Stir in rice and egg. Sprinkle with soy sauce. Heat thoroughly.
This recipe yields 4 to 6 servings.

Spam Salad
2 cups finely diced ham
3 hard-boiled eggs, chopped
1/4 cup sweet pickle relish
1/4 cup mayonnaise
2 Tbsp minced onion
2 Tbsp minced celery
2 Tbsp minced red bell pepper
1 Tbsp chopped fresh parsley
2 Tsp Dijon mustard
1 Tbsp lemon juice
A large pinch of cayenne (optional)
Salt and black pepper to taste
Mix everything but the salt, pepper and cayenne in a large bowl. Taste and add cayenne, salt and black pepper to taste. Serve chilled.
Serve straight, or mixed in with macaroni, or in a sandwich in a hamburger bun, a Kaiser roll, regular bread, in a pita or as a wrap. Good with lemonade on a hot day.
Makes enough for 3 to 4 sandwiches.

Pineapple Spam Loaf
1 (12 oz.) can Spam luncheon meat
1 (8 oz.) can pineapple slices
1/4 c. brown sugar
1/4 tsp. dry mustard
Cut 4 slices, almost but not quite all the way through Spam loaf. cut pineapple slices in half and place one half slice in each of the slits in the Spam. Place in shallow casserole. Combine brown sugar and dry mustard with 4 tablespoons pineapple juice, spoon over Spam. Bake at 350 degrees for 25 to 30 minutes. Makes 4 servings. Baste occasionally.

Hawaiian Spam and Cabbage
12 oz spam
1/2 onion
1 medium cabbage
1 garlic clove
1/4 cup soy sauce
sesame oil
Cut Spam into strips or diced. Slice half a round onion and one medium cabbage thinly. Chop one clove of garlic. Heat sesame oil in pot. Add Spam & all other ingredients. Cook until cabbage is done. Serve over rice.

Spam Vegetable Strudel
1 pk (6.25 oz) Long-grain and wild rice mix
1/2 c Chopped carrot
1/2 c Chopped red bell pepper
1/4 c Orange juice
1 (12 oz) can Spam Luncheon Meat, cut in thin strips
2 c Chopped mushrooms
1/4 c Sliced green onions
1 T Dijon-style mustard
1/2 t Basil
1/4 t Pepper
6 Sheets frozen phyllo pastry, thawed
Butter-flavor vegetable cooking spray
1 T Dry bread crumbs
Soy sauce
Heat oven to 375’F. Prepare rice according to package directions. In small saucepan, combine carrots, red pepper, and orange juice. Bring to a boil. Cover and cook 5-7 minutes or until crisp-tender. Drain well. Place in medium bowl. In large skillet, saute Spam, mushrooms, and green onion until tender. Add Spam mixture, rice, mustard, basil, and pepper to vegetable mixture; stir well. Place 1 sheet phyllo pastry on a damp towel (keep remaining phyllo covered). Lightly coat phyllo with cooking spray. Layer remaining 5 sheets phyllo pastry on first sheet, lightly coating each sheet with cooking spray. Spoon Spam mixture lengthwise down center of phyllo stack, leaving a 1/2” border. Roll phyllo jelly-roll style, starting with long side containing Spam mixture. Tuck ends under; place diagonally, seam side down, on baking sheet coated with cooking spray. Lightly coat top of pastry with cooking spray and sprinkle with bread crumbs. Make 12 (1/4” deep) diagonal slits across top of pastry using a sharp knife.
Bake 20 minutes or until golden. Serve with soy sauce. Print this post
